Cooking bolognese in the slow cooker results in deliciously tender meat.
Brown the beef, pancetta and the onions before adding to the slow cooker for maximum flavour.

(14oz) lean minced beef
75 g
(3oz) pancetta, chopped, or smoked bacon lardons
1 tbsp.
olive oil

onion, chopped
2
carrots, chopped
2
celery sticks, chopped
2
garlic cloves, crushed
125 ml
(4 fl oz) white wine
2 tbsp.
tomato puree
400 g
(14oz) tin chopped tomatoes
1 tbsp.
Italian herb seasoning
300 ml
(10 fl oz (½ pint)) beef stock
4 tbsp.
double cream (optional)
Spaghetti, Parmesan cheese and fresh basil to serve

Heat the oil in a large pan on high heat and brown the beef and pancetta, about 10 minutes. Tip into slow cooker.

Lower the heat to medium and cook the onion, carrots and celery until soft, about 10 minutes. Add the garlic, wine and tomato puree and bubble for 1min. Add to the slow cooker.

Add the tinned tomatoes, dried herbs and stock to the slow cooker and stir to combine. Cover with lid and cook on high for 1 hour then low for 5-6hr, stirring in cream for last 30min, if using.

Season to taste and serve with cooked spaghetti, grated parmesan and torn basil leaves.
